I’m literally typing as I’m eating, this salad turned out so delicious I couldn’t wait to share.
It’s so simple and fresh and goes with absolutely anything. If you are not familiar with wheat berries, they are a fibrous whole grain with a nutty taste and a delightful chewy texture, almost similar to rice. I paired the grain with cranberries, pecans and feta cheese, which creates a perfect bite of salty and sweet.
Top the salad with a very simple vinaigrette and voila! your new favorite meal/side dish/snack is here!
- 1 cup uncooked wheat berries (cook according to package directions)
- ½ cup dried cranberries
- ½ cup chopped pecans
- 4-5 oz cubed feta
- ½ cup chopped green onion
- ¼ cup olive oil
- ¼ cup balsamic vinegar
- ½ teaspoon whole grain Dijon mustard
- 1 teaspoon honey
- Cook the wheat berries according to package directions, rinse and set aside in a large bowl. Prepare the vinaigrette by whisking together the olive oil, balsamic vinegar, mustard and honey. Combine the cranberries, pecans, feta and green onion with the cooked wheat berries.
- Drizzle on the vinaigrette and add as much as you like. I typically use over half the dressing. Enjoy!
