Wheat Berry Salad

Serves: 4 servings
Ingredients
  • 1 cup uncooked wheat berries (cook according to package directions)
  • ½ cup dried cranberries
  • ½ cup chopped pecans
  • 4-5 oz cubedĀ feta
  • ½ cup chopped green onion
  • ¼ cup olive oil
  • ¼ cup balsamic vinegar
  • ½ teaspoon whole grain Dijon mustard
  • 1 teaspoon honey
Instructions
  1. Cook the wheat berries according to package directions, rinse and set aside in a large bowl. Prepare the vinaigrette by whisking together the olive oil, balsamic vinegar, mustard and honey. CombineĀ the cranberries, pecans, feta and green onion with the cooked wheat berries.
  2. Drizzle on the vinaigrette and add as much as you like. I typically use over half the dressing. Enjoy!
