Add some color to this dreary winter with these vibrant, honey glazed carrots.
I was just out in LA for a quick work trip and while the 60 degree hazy weather was a welcome relief from the brutal New York cold (it even rained!!!), I found it hilarious how everyone felt the need to apologize for the less than perfect weather. As a southern California native I understand, we all expect 72 degrees and sunny skies, but really anything is better than the snow globe I’m living in.
Even though I’m back to reality and puffy jackets, I can still bring some of that California warmth to my kitchen. Pick up these cheerful rainbow carrots from your local store, available in vibrant red, orange, yellow, and purple. Drizzle with honey, olive oil, salt and pepper. Top with thyme and bake until caramelized. Enjoy!
- 2 bunches rainbow carrots, peeled and washed
- 2 tablespoons honey
- olive oil, for drizzling
- salt
- pepper
- chopped thyme
- Preheat oven at 450 degrees.
- Place carrots on parchment or foil lined baking sheet.
- Drizzle with olive oil, honey and season with salt and pepper.
- Sprinkle with thyme. Roast for about 30 minutes, tossing after the first 15 minutes.
