Honey Glazed Carrots
 
 
Ingredients
  • 2 bunches rainbow carrots, peeled and washed
  • 2 tablespoons honey
  • olive oil, for drizzling
  • salt
  • pepper
  • chopped thyme
Instructions
  1. Preheat oven at 450 degrees.
  2. Place carrots on parchment or foil lined baking sheet.
  3. Drizzle with olive oil, honey and season with salt and pepper.
  4. Sprinkle with thyme. Roast for about 30 minutes, tossing after the first 15 minutes.
