Avocado Toast is definitely having a moment right now, and it’s no surprise. This snack is healthy, delicious, filling and only requires a few ingredients.
Some foods are so simple and easy to make that they don’t seem worth talking about, but when it comes to avocado toast, this one absolutely is. What’s better than buttery, rich avocado and creamy ricotta cheese spread across a piece of thick, crispy bread? Add a drizzle of honey and a dash of cayenne pepper and you’ve got the perfect blend of sweet and spicy and crispy and creamy.
Depending on what you like (and what you have in your pantry) there are plenty of creative and delicious ways to upgrade your avocado toast. Try swapping out ricotta for goat cheese, sprinkle on big pieces of flaky salt or you could always add a fried egg on top.
What’s your favorite way to mash?
- 1 ripe avocado
- 1 slice toasted bread, thicker slices work best
- ricotta, enough to cover the slice of bread
- drizzle of honey
- cayenne pepper and salt to taste
- Cut the avocado in half and remove the pit. Scoop out both halves of the avocado and place in a medium sized bowl. Mash the avocado with a fork until almost smooth with a few chunks remaining. Toast bread and spread on a thin (or thick, up to you!) layer of ricotta cheese, then add the avocado on top. Finish with a drizzle of honey. Add salt and cayenne pepper to taste. Enjoy!
